Overnight Chia Oats with Strawberry Rhubarb Compote

Ingredients

  • 100 ml oats
  • 2 tbsp chia seeds
  • 150 ml yoghurt (I used soy)
  • 100 ml vegan milk such as oat, soy or almond
  • Optional: 1 tsp agave or maple syrup, dash of vanilla

Compote

  • 100 g rhubarb
  • 150 g strawberries (frozen work well)
  • 1-2 tbsp agave or maple syrup

Preparation

  1. Stir together oats, chia, yoghurt and milk (plus syrup and vanilla if using) in a bowl or jar. Cover and keep in the fridge overnight.

  2. Finely slice the rhubarb and strawberries and put in a pot. Bring to the boil, reduce the heat and let simmer for a few minutes until the rhubarb is soft. Add sweetener of choice.

  3. Serve your oats together with the warm compote.
