Overnight Chia Oats with Strawberry & Rhubarb Compote
Ingredients
- 100 ml oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tbsp chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 150 ml yoghurt (i used soy)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 100 ml vegan milk such as oat, soy or almond⠀⠀⠀⠀⠀⠀⠀⠀⠀
- compote:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 100 g rhubarb⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 150 g strawberries (frozen work well)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1-2 tbsp agave or maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation
Stir together oats, chia, yoghurt and milk (plus syrup and vanilla if using) in a bowl or jar. Cover and keep in the fridge overnight.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Finely slice the rhubarb and strawberries and put in a pot. Bring to the boil, reduce the heat and let simmer for a few minutes until the rhubarb is soft. Add sweetener of choice.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve your oats together with the warm compote
