Overnight Chia Oats with Strawberry & Rhubarb Compote

Ingredients

  • 100 ml oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 150 ml yoghurt (i used soy)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 100 ml vegan milk such as oat, soy or almond⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • compote:⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 100 g rhubarb⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 150 g strawberries (frozen work well)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1-2 tbsp agave or maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preparation

  1. Stir together oats, chia, yoghurt and milk (plus syrup and vanilla if using) in a bowl or jar. Cover and keep in the fridge overnight.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  2. Finely slice the rhubarb and strawberries and put in a pot. Bring to the boil, reduce the heat and let simmer for a few minutes until the rhubarb is soft. Add sweetener of choice.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  3. Serve your oats together with the warm compote
