Overnight Chia Oats with Strawberry Rhubarb Compote
Ingredients
- 100 ml oats
- 2 tbsp chia seeds
- 150 ml yoghurt (I used soy)
- 100 ml vegan milk such as oat, soy or almond
- Optional: 1 tsp agave or maple syrup, dash of vanilla
Compote
- 100 g rhubarb
- 150 g strawberries (frozen work well)
- 1-2 tbsp agave or maple syrup
Preparation
Stir together oats, chia, yoghurt and milk (plus syrup and vanilla if using) in a bowl or jar. Cover and keep in the fridge overnight.
Finely slice the rhubarb and strawberries and put in a pot. Bring to the boil, reduce the heat and let simmer for a few minutes until the rhubarb is soft. Add sweetener of choice.
Serve your oats together with the warm compote.
