Vegan Pancakes with Homemade Apple Jam
Ingredients
Apple jam
- 4-5 apples, chopped
- 2 tablespoon cinnamon
Pancake batter
- 1.5 cup of flour
- 1 tablespoon vegan sugar
- 1 cup of plant milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla or cardamom
- 3 tablespoon coconut oil
Preparation
Apple jam
Add apples and cinnamon to a saucepan with a little splash of water.
Let cook at low heat for 20-25 min. and cool down.
Afterwards blend the jam with a mixer until smooth and creamy.
Store in the fridge.
Pancakes
Mix all ingredients in a big bowl.
Let the batter rest for 30 min.
Cook the pancakes with plant butter in a hot pan.
