Vegan Pancakes with Homemade Apple Jam

Ingredients

Apple jam

  • 4-5 apples, chopped
  • 2 tablespoon cinnamon

Pancake batter

  • 1.5 cup of flour
  • 1 tablespoon vegan sugar
  • 1 cup of plant milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla or cardamom
  • 3 tablespoon coconut oil

Preparation

Apple jam

  1. Add apples and cinnamon to a saucepan with a little splash of water.

  2. Let cook at low heat for 20-25 min. and cool down.

  3. Afterwards blend the jam with a mixer until smooth and creamy.

  4. Store in the fridge.

Pancakes

  1. Mix all ingredients in a big bowl.

  2. Let the batter rest for 30 min.

  3. Cook the pancakes with plant butter in a hot pan.
