Soft Matcha Mousse with Coconut Milk

Ingredients

  • 150 g (5 oz) chopped white chocolate
  • 500 ml (2 cups) coconut milk
  • 85 grams (1/4 cup) honey
  • 6 grams Agar Agar Powder
  • 7 grams matcha
  • 3-5 tbsp water

Preparation

  1. Chop white chocolate into small pieces and set aside in a large bowl.

  2. In a pot, heat coconut milk and honey until simmering then pour over the chopped chocolate. Stir to combine.

  3. In a second pot, whisk together agar, matcha and a few tablespoons of water.

  4. Bring the matcha mixture to a boil for 1-2 minutes then pour into the bowl with the white chocolate and coconut milk.

  5. Blitz to combine either in a blender or with a hand blender.

  6. Transfer mixture to serving dishes and refrigerate until set.

  7. Top with a sprinkle of matcha or sesame seeds and serve.
