Pimento Mac and Cheese with Hot Honey Crumbs
Ingredients
- 1 sleeve Ritz crackers
- Drizzle of Mike's hot honey
- 1/2 stick butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 2 cups heavy cream
- 2 cups freshly shredded sharp cheddar
- 1 cup pimento cheese
- 1 box Cavatappi pasta
Preparation
Mash Ritz crackers and toast over medium low heat. Drizzle Mike’s hot honey and toss. Set aside.
Melt butter over medium low heat. Add flour and whisk to make a roux. Add milk and heavy cream and bring to a simmer. Add cheddar cheese and pimento cheese and mix. Let simmer until pasta finishes cooking. Season with salt and freshly cracked pepper.
Bring a pot of water to boil. Cook pasta al dente and transfer directly to sauce.
Top with Ritz breadcrumbs and a heavy drizzle of Mike’s hot honey. Serve and enjoy.
