Quick and Easy Blender Chocolate Cake

Ingredients

Cake

  • 2 cups sifted all-purpose flour
  • 1 1/2 cups whole milk
  • 1 cup 50% cocoa powder
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 1/2 tablespoons baking powder

Frosting

  • 1 (14-ounce) can sweetened condensed milk
  • 6 heaping tablespoons cocoa powder
  • 1/2 tablespoon unsalted butter
  • 4 tablespoons heavy cream (or canned cream of milk)

Optional glaze variation

  • 1 cup whole milk
  • 1/2 cup 50% dark chocolate, chopped
  • 1/2 cup granulated sugar
  • 3 tablespoons butter or margarine
  • 1 teaspoon all-purpose flour or cornstarch

Garnish

  • Sprinkles, to taste

Preparation

  1. Place eggs, milk, sugar, and oil in a blender and blend for 2 minutes

  2. In a separate bowl, whisk together flour, cocoa powder, and baking powder

  3. Pour the blended mixture into the dry ingredients and stir until just combined

  4. Pour the batter into a greased medium cake pan

  5. Bake in a preheated oven at 180Β°C (350Β°F) for 40 minutes

  6. Let the cake cool completely in the pan on a wire rack

  7. For the frosting: in a saucepan, combine sweetened condensed milk, cocoa powder, and butter; cook over medium heat, stirring constantly, until it reaches a soft fudge-like consistency

  8. Stir in heavy cream and bring to a boil; cook for 1 minute

  9. Pour the frosting over the cooled cake

  10. Sprinkle with sprinkles to taste

  11. Serve immediately

Notes

  1. Alternative Glaze: Instead of the condensed milk frosting, combine whole milk, chopped chocolate, sugar, butter, and flour or cornstarch in a saucepan. Cook over medium heat, stirring constantly, until a creamy glaze forms
