Quick and Easy Blender Chocolate Cake
Ingredients
Cake
- 2 cups sifted all-purpose flour
- 1 1/2 cups whole milk
- 1 cup 50% cocoa powder
- 1 cup granulated sugar
- 3 large eggs
- 1 cup vegetable oil
- 1 1/2 tablespoons baking powder
Frosting
- 1 (14-ounce) can sweetened condensed milk
- 6 heaping tablespoons cocoa powder
- 1/2 tablespoon unsalted butter
- 4 tablespoons heavy cream (or canned cream of milk)
Optional glaze variation
- 1 cup whole milk
- 1/2 cup 50% dark chocolate, chopped
- 1/2 cup granulated sugar
- 3 tablespoons butter or margarine
- 1 teaspoon all-purpose flour or cornstarch
Garnish
- Sprinkles, to taste
Preparation
Place eggs, milk, sugar, and oil in a blender and blend for 2 minutes
In a separate bowl, whisk together flour, cocoa powder, and baking powder
Pour the blended mixture into the dry ingredients and stir until just combined
Pour the batter into a greased medium cake pan
Bake in a preheated oven at 180Β°C (350Β°F) for 40 minutes
Let the cake cool completely in the pan on a wire rack
For the frosting: in a saucepan, combine sweetened condensed milk, cocoa powder, and butter; cook over medium heat, stirring constantly, until it reaches a soft fudge-like consistency
Stir in heavy cream and bring to a boil; cook for 1 minute
Pour the frosting over the cooled cake
Sprinkle with sprinkles to taste
Serve immediately
Notes
Alternative Glaze: Instead of the condensed milk frosting, combine whole milk, chopped chocolate, sugar, butter, and flour or cornstarch in a saucepan. Cook over medium heat, stirring constantly, until a creamy glaze forms
