Simple Brazilian Blender Lemon Cake
Ingredients
- 3 eggs
- 2 cups sugar
- 2 1/2 cups all-purpose flour
- 1/2 cup vegetable oil
- 1 cup warm milk
- 1 tablespoon baking powder
- zest of 1 lemon
- juice of 1 lemon
Frosting
- 1 (14 oz) can sweetened condensed milk
- 1 (200ml) carton heavy cream
- 200ml fresh lemon juice
Preparation
Blend eggs, oil, milk, and sugar in a blender for 3 minutes
Add lemon juice, flour, and lemon zest and blend for 1 minute
Add baking powder and stir until smooth
Pour into a greased and floured round baking pan
Bake in a preheated oven at 180 degrees Celsius for 35 to 50 minutes
Frosting
Blend sweetened condensed milk, heavy cream, and lemon juice in a blender for 3 minutes
Refrigerate the frosting for 30 minutes
Unmold the cake and let it cool completely
Spread the frosting over the cooled cake and serve
