Simple Brazilian Blender Lemon Cake

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 1 cup warm milk
  • 1 tablespoon baking powder
  • zest of 1 lemon
  • juice of 1 lemon

Frosting

  • 1 (14 oz) can sweetened condensed milk
  • 1 (200ml) carton heavy cream
  • 200ml fresh lemon juice

Preparation

  1. Blend eggs, oil, milk, and sugar in a blender for 3 minutes

  2. Add lemon juice, flour, and lemon zest and blend for 1 minute

  3. Add baking powder and stir until smooth

  4. Pour into a greased and floured round baking pan

  5. Bake in a preheated oven at 180 degrees Celsius for 35 to 50 minutes

Frosting

  1. Blend sweetened condensed milk, heavy cream, and lemon juice in a blender for 3 minutes

  2. Refrigerate the frosting for 30 minutes

  3. Unmold the cake and let it cool completely

  4. Spread the frosting over the cooled cake and serve
