Baked Artichokes with Vegetables

Ingredients

  • 12 medium peeled and boiled artichokes
  • 3 tablespoons olive oil
  • 1/2 cup peas
  • 1/2 cup chopped carrots
  • 1 medium chopped onion
  • 1 clove crushed garlic
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1/2 cup broth
  • 1 teaspoon dried thyme

Preparation

  1. Adjust the oven rack to the middle and preheat the oven to 180°C.

  2. Prepare a medium-sized oven dish suitable for serving.

  3. In a wide skillet, heat the oil over medium heat, add the artichokes, and stir until golden brown then transfer to the oven dish.

  4. In the same skillet, add the peas, carrots, onion, garlic, salt, and pepper then stir until golden brown. Spread over the artichokes and pour in the lemon juice, olive oil, and broth.

  5. Place the dish in the oven and bake for 20 minutes or until the sauce thickens.

  6. Remove from the oven, sprinkle with dried thyme, and serve with grilled meats.
