Baked Fish with Vegetables

Ingredients

  • 4 pieces of fish
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 6 crushed garlic cloves
  • 1 cup chopped parsley
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground saffron
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 4 bay leaves
  • 3 large carrots, sliced
  • 1 green pepper, sliced
  • 2 medium green peppers, sliced
  • 1 large onion, cut into round slices
  • 1 large tomato, peeled and chopped
  • 1 large lemon, sliced
  • 2 large tomatoes, sliced

Garnish

  • chopped parsley

Preparation

  1. Wash the fish with water and let it drain in a colander to remove water.

  2. In a deep bowl, put olive oil, lemon juice, garlic, parsley, cumin, turmeric, saffron, paprika, pepper, and salt, mix well. Let it sit for a few minutes.

  3. Spread some of the spice mixture inside and outside the fish and rub it well to absorb the flavors. Place a bay leaf inside each fish.

  4. Add the chopped tomato to the remaining marinade.

  5. In a wide oven dish, spread half of the carrots, green pepper, bell pepper, onion, lemon slices, and tomato slices, place the fish pieces on top of the vegetables. Spread the marinade mixture and chopped tomato, then the remaining vegetables.

  6. Place the fish in the oven at 190°C for about an hour until the vegetables are cooked and the fish is roasted.
