Baked Chicken with Mashed Potatoes
Ingredients
- 1 whole chicken breast (700-800 grams)
- 1 onion
- 1 red bell pepper
- 2 green peppers
- 2-3 garlic cloves
- 1 teaspoon red pepper flakes
- 1 teaspoon paprika
- Black pepper to taste
- Salt to taste
Mashed potatoes
- 5 medium potatoes
- 1 tablespoon butter
- 1/4 cup milk
- Salt to taste
Béchamel sauce
- 1 tablespoon butter
- 1 heaping tablespoon flour
- 1.5 cups milk
- Salt to taste
- 1/2 teaspoon black pepper
Toppings
- Finely chopped parsley
- Grated cheese
Preparation
Peel the potatoes, chop them into large pieces, add water, and boil until completely soft. Drain excess water.
While hot, add butter, salt, and milk to the potatoes and mash well.
Cook the cubed chicken breast in a pan with oil until it releases and absorbs its water.
Add chopped onion, peppers, and crushed garlic, and sauté well.
Add the spices and mix.
For the béchamel sauce, melt butter in a pan, add flour, and cook lightly until the flour smell is gone.
Add milk and stir until thickened.
Add salt and black pepper to the sauce, mix, and remove from heat.
Assemble the dish by combining the mashed potatoes, chicken mixture, and béchamel sauce.
Top with grated cheese and finely chopped parsley.
Bake at 200 degrees Celsius until the cheese melts and browns.
Serve hot.
Tips
Make the béchamel sauce at the end to prevent it from thickening while waiting.
