Baked Stuffed Potatoes Turkish Style
Ingredients
- 7 potatoes
- 200g ground meat
- 1 onion
- 1 tomato
- 1 green pepper
- 3 garlic cloves
- 1 teaspoon tomato paste
- 1/4 bunch parsley
- Red pepper flakes
- Black pepper
- Salt
Sauce
- 1/2 tablespoon tomato paste
- 1 cup water
Preparation
Brown the ground meat in a pan.
Add 4 tablespoons of vegetable oil and continue cooking.
Stir in the diced onion and cook until it softens and turns pinkish.
Add the green pepper and grated garlic, and cook for a few more minutes.
Mix in the tomato paste.
Add the diced tomatoes.
Season with red pepper flakes, black pepper, and salt, then cook for an additional 6-7 minutes and remove from heat.
Peel the potatoes and cut them in half if they are large; if small, leave whole.
Scoop out the inside of the potatoes using a teaspoon and save the flesh for other uses.
Lightly fry the potato halves on both sides in a little oil until golden.
Lightly salt the fried potatoes and arrange them in a baking dish.
Fill the potato cavities with the meat mixture and top with slices of tomato and green pepper.
Prepare the sauce by mixing 1/2 tablespoon of tomato paste with 1 cup of water, and pour it over the stuffed potatoes.
Cover with oiled parchment paper and bake in a preheated oven at 190 degrees Celsius for about 30 minutes.
The dish is ready when the potatoes are soft; serve immediately.
Tips
Serve with rice and cacık to make a complete main meal.
Do not discard the scooped-out potato; it can be used in other dishes like gözleme or börek.
