Baked Stuffed Potatoes Turkish Style

Ingredients

  • 7 potatoes
  • 200g ground meat
  • 1 onion
  • 1 tomato
  • 1 green pepper
  • 3 garlic cloves
  • 1 teaspoon tomato paste
  • 1/4 bunch parsley
  • Red pepper flakes
  • Black pepper
  • Salt

Sauce

  • 1/2 tablespoon tomato paste
  • 1 cup water

Preparation

  1. Brown the ground meat in a pan.

  2. Add 4 tablespoons of vegetable oil and continue cooking.

  3. Stir in the diced onion and cook until it softens and turns pinkish.

  4. Add the green pepper and grated garlic, and cook for a few more minutes.

  5. Mix in the tomato paste.

  6. Add the diced tomatoes.

  7. Season with red pepper flakes, black pepper, and salt, then cook for an additional 6-7 minutes and remove from heat.

  8. Peel the potatoes and cut them in half if they are large; if small, leave whole.

  9. Scoop out the inside of the potatoes using a teaspoon and save the flesh for other uses.

  10. Lightly fry the potato halves on both sides in a little oil until golden.

  11. Lightly salt the fried potatoes and arrange them in a baking dish.

  12. Fill the potato cavities with the meat mixture and top with slices of tomato and green pepper.

  13. Prepare the sauce by mixing 1/2 tablespoon of tomato paste with 1 cup of water, and pour it over the stuffed potatoes.

  14. Cover with oiled parchment paper and bake in a preheated oven at 190 degrees Celsius for about 30 minutes.

  15. The dish is ready when the potatoes are soft; serve immediately.

Tips

  1. Serve with rice and cacık to make a complete main meal.

  2. Do not discard the scooped-out potato; it can be used in other dishes like gözleme or börek.
