Fresh Sardine Salad with Lemon and Herbs
Ingredients
- 2 stalks celery
- 2 cans sardines (skinless and boneless)
- 1 whole big lemon
- 1/4 cup chopped parsley
- 2-3 tablespoons mayo
- 1 teaspoon dijon mustard
- 1 teaspoon pickle relish (sugar free)
- salt and pepper to taste
- butter lettuce
- red cabbage kraut
Preparation
Combine celery, sardines, lemon juice from the squeezed lemon, chopped parsley, mayo, dijon mustard, pickle relish, salt, and pepper in a bowl.
Prepare butter lettuce leaves.
Scoop the sardine mixture into the lettuce leaves and top with red cabbage kraut.
Use lots of lemon and fresh herbs for best flavor, as suggested.
