Fresh Sardine Salad with Lemon and Herbs

Ingredients

  • 2 stalks celery
  • 2 cans sardines (skinless and boneless)
  • 1 whole big lemon
  • 1/4 cup chopped parsley
  • 2-3 tablespoons mayo
  • 1 teaspoon dijon mustard
  • 1 teaspoon pickle relish (sugar free)
  • salt and pepper to taste
  • butter lettuce
  • red cabbage kraut

Preparation

  1. Combine celery, sardines, lemon juice from the squeezed lemon, chopped parsley, mayo, dijon mustard, pickle relish, salt, and pepper in a bowl.

  2. Prepare butter lettuce leaves.

  3. Scoop the sardine mixture into the lettuce leaves and top with red cabbage kraut.

  4. Use lots of lemon and fresh herbs for best flavor, as suggested.
