Spatchcock Chicken with Grilled Vegetables

Ingredients

  • Chicken
  • Rosé wine
  • Lemon
  • Bart’s Sweet Smoked Paprika
  • Courgette
  • Peppers
  • Red onion
  • Heritage tomatoes
  • Chorizo
  • Parsley
  • Edible flowers

Preparation

  1. Spatchcock the chicken to flatten it.

  2. Marinate the chicken in a mixture of rosé wine, lemon, and Bart’s Sweet Smoked Paprika.

  3. Grill the chicken over charcoal until it is golden and crisp.

  4. Grill the courgette, peppers, red onion, heritage tomatoes, and chorizo until charred.

  5. Combine all ingredients and finish with chopped parsley and edible flowers.
