Malaysian Grilled Chicken

Ingredients

Main ingredient

  • 1/2 chicken

Aromatics

  • 1 stalk lemongrass
  • 5 cloves garlic
  • a little ginger

Marinade

  • oyster sauce to taste
  • chili sauce to taste
  • tomato sauce to taste
  • turmeric powder to taste
  • black pepper powder to taste
  • crushed black pepper to taste
  • a little white pepper
  • salt to taste
  • a little cooking oil or sesame oil
  • about 1 tablespoon margarine

Optional sweetener

  • sugar or honey, optional

Preparation

  1. Wash and drain the chicken.

  2. Prepare a bowl and mix all the marinade ingredients together.

  3. Add the aromatics and stir well.

  4. Marinate the chicken with the mixture for at least 30 minutes.

  5. If using sugar, add it to the marinade mixture.

  6. If using honey, set it aside for later use.

  7. Bake the chicken in the oven with bottom heat at 180°C and top heat at 150°C for about 1 hour and 30 minutes.

  8. If using honey, brush it on the chicken during the last 10 to 15 minutes of baking for a glossy finish.

Tips

  1. Adjust the baking time and temperature according to your oven.

  2. The sweetener can be omitted if not desired.
