Toasted Sesame and Chilli Chicken
Ingredients
- 1 tandoori sized chicken (or a small roaster)
- 3 tsp sesame seeds
- 2 large dried red chillies (use more if you want more spice)
- 2 tbsp oil
- 1 tsp salt
- 1 tsp minced ginger
- 1 tsp minced garlic
- 1 tsp paprika
- 1 tsp curry powder
- 1/2 tsp chilli powder (use more if you want it spicier)
- 1/4 tsp food colouring (optional, for a bright colour)
- coriander to garnish
Preparation
Toast the sesame seeds lightly in a dry pan till they release their aroma. Blitz the sesame seeds along with 2 large dried red chillies in a spice mill or food processor till fine or use a pestle and mortar.
Add the oil, salt, ginger, garlic, spices and food colouring (optional) to create a thick paste.
Apply the paste to the outside of your washed and drained chicken, leave the skin on to keep the chicken moist but remove it if you're not fond of chicken skin, works both ways. Leave marinade on for 30 mins minimum before cooking the chicken.
Cook the marinated chicken in the oven on gas mark 6 for 1 - 1 hr 20 minutes, until the chicken is cooked through to the centre and the juices run clear.
Garnish with fresh coriander and serve with rice, pilau or chips and enjoy!
