Veggie Dumplings and Ramen

Ingredients

  • 1 liter or 34 oz vegetable stock
  • 2 garlic cloves minced
  • 1 tablespoon ginger minced
  • 2 tablespoons sesame or vegetable oil
  • 1 tablespoon rice vinegar
  • 3 tablespoons soy sauce
  • Handful of chopped mushrooms
  • 1 scallion
  • Ramen noodles
  • Veggie dumplings

Preparation

  1. Heat the oil in a pot over medium heat and sauté garlic and ginger for 2-3 minutes

  2. Add soy sauce, rice vinegar, and vegetable stock.

  3. Put on a lid and bring to a simmer.

  4. Cook ramen noodles until done, likely in the simmering stock

  5. Add mushrooms, scallion, and veggie dumplings, then serve.
