Easy Blueberry French Toast Bake
Ingredients
- 3 eggs
- 2 scoops vanilla protein (I used @ancientnutrition vanilla collagen)
- 1 tbsp cinnamon
- 1/2 cup unsweetened almond milk
- 1/4 cup coconut sugar
- 2 tbsp maple syrup
- 1/2 cup blueberries
- 4 1/2 cups cubed sourdough bread
Preparation
Mix together everything except the blueberries and bread.
Add the bread and let every piece soak up the mixture, then add the blueberries and mix with a spatula.
You can either cook right away or refrigerate overnight.
To bake: Preheat oven to 350°F and bake for 35-40 minutes.
Use frozen blueberries for a budget-friendly option as they work well in this recipe.
This dish can be prepared the night before and baked in the morning to save time.
Pair a slice with plain Greek yogurt for a complete and satisfying meal without needing extra syrup.
