Crispy French Toast Bites with Dips

Ingredients

  • 2 eggs
  • 1/2 cup unsweetened almond milk
  • 2 scoops of @ancientnutrition vanilla collagen
  • 1 tsp cinnamon
  • 1 tbsp maple syrup
  • 2-3 slices of sourdough bread
  • butter or coconut oil
  • butter for serving
  • peanut butter for dipping
  • yogurt for dipping

Preparation

  1. Mix together the eggs, almond milk, vanilla collagen, cinnamon, and maple syrup in a bowl using a hand mixer or immersion blender.

  2. Cut 2-3 slices of sourdough bread into cubes and add them to the bowl to soak up the mixture.

  3. Heat a skillet over low to medium heat and add butter or coconut oil.

  4. Add the soaked bread cubes to the skillet and cook until crispy on all sides, about 5-6 minutes. Cook in batches if necessary and stir to prevent sticking.

  5. Serve with butter, peanut butter, and yogurt for dipping.

Baking method

  1. Preheat oven to 350°F.

  2. Place the soaked bread cubes on a baking sheet.

  3. Bake for 20-25 minutes, turning occasionally to ensure even cooking.
