Flourless Almond Butter Banana Muffins

Ingredients

  • 2 ripe bananas {mashed}
  • 2 eggs
  • 1 cup crunchy @barneybutter almond butter
  • 1/4 cup @nutiva coconut sugar
  • 2 tsp. vanilla extract
  • 1 tsp. @simplyorganicfoods ceylon cinnamon
  • 1/2 tsp. baking powder
  • 1/4 tsp. Himalayan pink salt
  • @alterecosf chocolate chunks

Preparation

  1. Preheat the oven to 375F.

  2. Whisk together the mashed banana, eggs, nut butter, coconut sugar, and vanilla extract until a uniform mixture has formed.

  3. Stir in the cinnamon, baking powder, and salt and fold in the chocolate chips or chunks.

  4. Fill greased or lined muffin cups three-quarters full and bake for 25 minutes or until a toothpick comes out clean.
