Delicious Homemade Banana Bread with Walnuts and Spices
Ingredients
- 3 ripe bananas (1 split in half for the top)
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 3 eggs or 2 tbsp flaxseeds with 2 tbsp chia seeds pre-soaked in 1/4 cup water
- 3/4 tsp baking soda or 1 tsp baking soda if not using eggs
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 2 tbsp coconut oil
- 3 tbsp maple syrup or 1/4 cup coconut sugar or honey
- 1/2 cup roughly chopped walnuts
Preparation
Preheat oven to 180C
Grease a loaf tin with coconut oil
In a bowl, mix the dry ingredients: almond flour, coconut flour, cinnamon, and baking soda
In another bowl, mix the wet ingredients: mashed bananas, eggs (or flaxseed-chia soak), vanilla extract, and maple syrup (or alternative)
Fold wet ingredients into dry ingredients
Crush the walnuts on a chopping board with a hammer or pestle
Fold walnuts into the batter, leaving a few to sprinkle on top
Transfer batter to the loaf tin and top with the two banana slices and reserved walnuts
Bake the banana bread for 45-50 minutes or until a knife comes out clean
Remove from oven and let cool before removing from tin
Slice when cooled down and serve with vanilla ice cream or on its own
Perfect for lunch boxes or with tea or coffee; kids love it; stores in fridge for over a week
