Royal Kunafa with Fruits
Ingredients
- 500 grams kunafa
- 1 cup powdered sugar
- 1 cup melted ghee
Nut and fruit mixture
- 1/2 cup walnuts
- 1/2 cup pistachios
- 1/2 cup hazelnuts
- 1/2 cup raisins
- 1/2 cup chopped apricots
- 1/2 cup chopped dates
- 1/2 cup candied cherries
- 4 chopped strawberries
- 2 chopped kiwis
- 2 cups kaymak
Preparation
Remove the frozen kunafa packet from the freezer and let it sit on the kitchen counter until it thaws and becomes soft.
Position the rack in the middle of the oven and preheat the oven to 180°C.
Prepare a shallow baking tray.
In a deep bowl, place the kunafa then sprinkle the sugar and ghee over it and rub with fingertips until it absorbs the ghee completely without breaking the strands.
Place the kunafa in the oven for 15 to 20 minutes until it browns, stirring several times with a wooden spoon during baking, then remove and let it cool completely.
Prepare a 9 or 10-inch mold and line it with plastic wrap.
In the bottom of the mold, spread half of the nut and fruit mixture, add half of the kunafa and press firmly, spread the kaymak to cover, add the remaining fruit mixture, top with the remaining kunafa and press lightly to hold layers together.
Place the mold in the refrigerator for several hours.
Flip the kunafa onto a serving plate, garnish with pistachios and serve immediately.
