Pink Pitaya Overnight Oats
Ingredients
- 1/2 cup oats
- 1/2 cup coconut milk
- 1 tbsp vanilla protein
- 1 tbsp maple syrup
- 3 strawberries, sliced
- 1/2 tsp Pink Pitaya Powder
- 2 tbsp Greek Yoghurt
Preparation
Blend oatmeal to create a fine crumb.
Transfer blended oats to containers with protein, maple syrup, 1 tablespoon yoghurt, coconut milk and Pink Pitaya Powder.
Stir to combine.
Add 1 tablespoon of yoghurt with 1/4 teaspoon of Pitaya Powder on top to create cream layer.
Add sliced strawberries on top and store overnight in the fridge.
