Pink Pitaya Overnight Oats

Ingredients

  • 1/2 cup oats
  • 1/2 cup coconut milk
  • 1 tbsp vanilla protein
  • 1 tbsp maple syrup
  • 3 strawberries, sliced
  • 1/2 tsp Pink Pitaya Powder
  • 2 tbsp Greek Yoghurt

Preparation

  1. Blend oatmeal to create a fine crumb.

  2. Transfer blended oats to containers with protein, maple syrup, 1 tablespoon yoghurt, coconut milk and Pink Pitaya Powder.

  3. Stir to combine.

  4. Add 1 tablespoon of yoghurt with 1/4 teaspoon of Pitaya Powder on top to create cream layer.

  5. Add sliced strawberries on top and store overnight in the fridge.
