Easy Thick and Fluffy Vegan Pancakes

Ingredients

  • 60g SR flour
  • 20g @iswariireland_uk pea protein
  • 1tsp Maca powder
  • 1tsp baking powder
  • 1tbsp @sweetfreedomuk light syrup
  • 1/2C @almondbreeze unsweetened milk
  • 1/2tsp apple cider vinegar

Preparation

  1. Whisk vinegar, milk and syrup in a jug and set aside for 5 minutes.

  2. Combine flour, protein and baking powder then stir in milk.

  3. Leave batter to rest whilst preheating a pan on a medium heat.

  4. Melt a little non-dairy butter in the pan to prevent sticking, before adding 2 tablespoons mixture per pancake.

  5. Cook for 1-2 minutes until bubbles form, then flip and cook the other side similarly.

Toppings

  1. Top with soy yoghurt, peanut butter, and fresh berries.
