Easy Thick and Fluffy Vegan Pancakes
Ingredients
- 60g SR flour
- 20g @iswariireland_uk pea protein
- 1tsp Maca powder
- 1tsp baking powder
- 1tbsp @sweetfreedomuk light syrup
- 1/2C @almondbreeze unsweetened milk
- 1/2tsp apple cider vinegar
Preparation
Whisk vinegar, milk and syrup in a jug and set aside for 5 minutes.
Combine flour, protein and baking powder then stir in milk.
Leave batter to rest whilst preheating a pan on a medium heat.
Melt a little non-dairy butter in the pan to prevent sticking, before adding 2 tablespoons mixture per pancake.
Cook for 1-2 minutes until bubbles form, then flip and cook the other side similarly.
Toppings
Top with soy yoghurt, peanut butter, and fresh berries.
