Vegan Chickpea Pancakes

Ingredients

  • 100g chickpea flour
  • 100g oat milk
  • 1 Tbs coconut sugar
  • 1 tsp baking powder
  • 1 Tbs apple cider vinegar
  • 1/3 tsp turmeric powder
  • 1/2 tsp cinnamon
  • 1 mashed banana

Preparation

  1. In a bowl, mix together the dry ingredients: chickpea flour, coconut sugar, baking powder, turmeric powder, and cinnamon

  2. In another bowl, combine the wet ingredients: oat milk, apple cider vinegar, and mashed banana

  3. Gradually add the wet mixture to the dry mixture, stirring until a smooth batter forms

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with oil if needed

  5. Pour portions of the batter onto the skillet to form pancakes, cook until bubbles appear on the surface, then flip and cook the other side until golden brown
