Easy Vegan Taco Pancakes

Ingredients

  • 1 banana, mashed (~90g)
  • 1 tsp apple cider vinegar
  • 80g chickpea flour
  • 55g rice flour
  • 1/3 tsp baking powder
  • 1/4 tsp baking soda
  • 150ml soy milk (or other?)
  • Sweetener of choice

Preparation

  1. Mix all ingredients.

  2. Depending on the flour you use, you might need more plant milk.

  3. Bake the pancakes in a well coated pan with a little bit of oil (optional).

  4. Serve with fillings or toppings of your choice!
