Soy and Chickpea Flour Pancakes

Ingredients

  • 3/4 cup soy flour
  • 1 smashed banana
  • 3 tbsp chickpea flour
  • a pinch of cardamom
  • 1/2 cup soy milk

Preparation

  1. In a bowl, mix the dry ingredients: soy flour, chickpea flour, and cardamom

  2. Mash the banana and combine it with the soy milk in another bowl

  3. Gradually add the wet mixture to the dry mixture, stirring to form a smooth batter

  4. Heat a non-stick skillet or griddle over medium heat. Pour batter to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown on the other side
