Blueberry Oatmeal Protein Pancakes

Ingredients

  • 1 cup soy milk
  • 1 cup rolled oats
  • 1 banana, mashed
  • 1/2 natural coconut yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 cup blueberry pancake protein powder
  • 1 cup blueberries (fresh or frozen)

Preparation

  1. Combine flour and baking powder in a small bowl

  2. In a separate mixing bowl combine milk and oats and let the mixture sit for 10 minutes

  3. Add mashed bananas and yogurt into the oat mixture and mix until combined

  4. Stir in oil and apple cider vinegar

  5. Add in protein powder and mix until just combined

  6. Fold in blueberries

  7. Drop about 2 tablespoons of the batter onto the pan over medium heat

  8. When bubbles pop, flip the pancake over

  9. Cook for another couple of minutes

  10. Repeat with the remaining batter

  11. Serve pancakes warm with fresh blueberries, coconut yogurt and maple syrup

  12. Enjoy right away!
