Coconut Blueberry Pancakes with Superfood Toppings
Ingredients
- 1 cup soy milk
- 1 tbsp coconut 'greek' style yogurt
- 2 tbsp desiccated coconut
- 1 cup wholemeal SRF
- agave syrup (optional)
Toppings
- blueberries
- coconut yogurt
- @unicornsuperfoods superfood powders
- agave syrup
Preparation
Blend all batter ingredients until smooth.
Butter a pan.
Make pancakes to desired size, adding blueberries on top before flipping.
Assembly
Mix @unicornsuperfoods superfood powder with coconut yogurt.
Layer with pancakes.
Top with agave and blueberries.
