Coconut Blueberry Pancakes with Superfood Toppings

Ingredients

  • 1 cup soy milk
  • 1 tbsp coconut 'greek' style yogurt
  • 2 tbsp desiccated coconut
  • 1 cup wholemeal SRF
  • agave syrup (optional)

Toppings

  • blueberries
  • coconut yogurt
  • @unicornsuperfoods superfood powders
  • agave syrup

Preparation

  1. Blend all batter ingredients until smooth.

  2. Butter a pan.

  3. Make pancakes to desired size, adding blueberries on top before flipping.

Assembly

  1. Mix @unicornsuperfoods superfood powder with coconut yogurt.

  2. Layer with pancakes.

  3. Top with agave and blueberries.
