Thick and Fluffy Matcha Pancakes Stack
Ingredients
- 300g self raising flour
- 1 tsp baking powder
- 2.5 tsp matcha
- 1/2 tsp moringa
- 1 tbs vanilla extract (sugar free)
- 400ml coconut milk
- 2 tsp raw cane sugar or maple syrup
Toppings
- strawberries
- blueberries
- dairy-free white chocolate mixed with coconut yogurt
Preparation
Whisk all the ingredients together until smooth and thick.
Add 2 tablespoons of batter to a non-stick pan at a time; add more for thicker pancakes.
Cook for 3-4 minutes until edges are set and bubbles appear on the surface.
Flip the pancakes and cook for another 2-3 minutes until golden on both sides and cooked through.
