Thick and Fluffy Matcha Pancakes Stack

Ingredients

  • 300g self raising flour
  • 1 tsp baking powder
  • 2.5 tsp matcha
  • 1/2 tsp moringa
  • 1 tbs vanilla extract (sugar free)
  • 400ml coconut milk
  • 2 tsp raw cane sugar or maple syrup

Toppings

  • strawberries
  • blueberries
  • dairy-free white chocolate mixed with coconut yogurt

Preparation

  1. Whisk all the ingredients together until smooth and thick.

  2. Add 2 tablespoons of batter to a non-stick pan at a time; add more for thicker pancakes.

  3. Cook for 3-4 minutes until edges are set and bubbles appear on the surface.

  4. Flip the pancakes and cook for another 2-3 minutes until golden on both sides and cooked through.
