Delicious Vegan Banana Cinnamon Pancakes

Ingredients

  • 1 ripe banana
  • 1 cup plant-based milk
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1 cup buckwheat flour
  • 2 tsp baking powder
  • 1.5 tsp ground cinnamon
  • pinch of sea salt

Preparation

  1. In a bowl, mash 1 ripe banana. Pour in 1 cup plant-based milk, 1 tsp vanilla extract, and 1 tsp apple cider vinegar, then whisk together.

  2. In the same bowl, add 1 cup buckwheat flour, 2 tsp baking powder, 1.5 tsp ground cinnamon, and a pinch of sea salt. Mix well until you have a smooth batter.

  3. Cook the batter on a non-stick frypan over medium heat for 2-3 minutes per side or until golden.

  4. Serve immediately with your favorite toppings, such as bananas, blueberries, hemp seeds, vanilla coconut yogurt, and maple syrup.
