Ingredients

  • 1 cup Birch Benders paleo pancake mix
  • 1 cup unsweetened almond milk
  • ghee for cooking

Toppings

  • fried egg
  • 1/2 avocado
  • kale
  • organic peanut butter
  • chocolate chunks
  • yogurt
  • cinnamon

Preparation

  1. Mix 1 cup of pancake mix and 1 cup of unsweetened almond milk with an immersion blender until smooth.

  2. Cook the pancakes over low medium heat in ghee.

  3. For the savory plate, prepare a fried egg, slice half an avocado, and add kale.

  4. For the sweet plate, add peanut butter, chocolate chunks, yogurt, and sprinkle cinnamon.

  5. Use a paleo-friendly nut butter instead of peanut butter if strictly following a paleo diet.
