Sweet and Savory Paleo Pancake Tacos
Ingredients
- 1/2 cup birchbenders banana paleo mix
- 1/2 cup unsweetened almond milk
- 1 tsp cinnamon
Fillings
- spinach
- avocado
- red pepper flakes
- banana
- organic peanut butter
Preparation
Mix the pancake mix with unsweetened almond milk and cinnamon to make the batter.
Heat a pan over low to medium heat and spray with nonstick spray.
Pour a few big spoonfuls of batter into the pan.
Cook until bubbles form in the middle, then carefully flip the pancake.
Repeat to make 2 pancakes.
Sauté spinach separately if desired, and prepare other fillings like slicing avocado and banana.
Pair the pancakes with the fillings: sautéed spinach, avocado, red pepper flakes, banana, and organic peanut butter for a taco-style meal.
