Sweet and Savory Paleo Pancake Tacos

Ingredients

  • 1/2 cup birchbenders banana paleo mix
  • 1/2 cup unsweetened almond milk
  • 1 tsp cinnamon

Fillings

  • spinach
  • avocado
  • red pepper flakes
  • banana
  • organic peanut butter

Preparation

  1. Mix the pancake mix with unsweetened almond milk and cinnamon to make the batter.

  2. Heat a pan over low to medium heat and spray with nonstick spray.

  3. Pour a few big spoonfuls of batter into the pan.

  4. Cook until bubbles form in the middle, then carefully flip the pancake.

  5. Repeat to make 2 pancakes.

  6. Sauté spinach separately if desired, and prepare other fillings like slicing avocado and banana.

  7. Pair the pancakes with the fillings: sautéed spinach, avocado, red pepper flakes, banana, and organic peanut butter for a taco-style meal.
