Creamy Shrimp Pasta with Saffron, Tomato, Lemon, and Dill

Ingredients

  • 400 g any pasta, preferably tagliatelle
  • 3 tbsp extra virgin olive oil
  • 1/2 leek, sliced
  • 4 garlic cloves, finely chopped
  • 1 small carrot, diced (1x1 cm)
  • 1 tsp chili flakes
  • 0.5 g saffron
  • 250 g cherry tomatoes, halved
  • 2 tbsp tomato puree
  • 5 dl cooking cream
  • 1 fish bouillon cube
  • 200 g peeled shrimp
  • 1 bunch dill, finely chopped
  • Lemon juice
  • Salt
  • Black and white pepper

Preparation

  1. Cook the pasta according to package instructions.

  2. Heat a pan with the olive oil and sauté leek, garlic, and carrot for at least 10 minutes.

  3. Add cherry tomatoes, chili flakes, and saffron, then fry for 1 minute before adding tomato puree and frying for another minute.

  4. Pour in the cooking cream and fish bouillon cube, then let it simmer and combine for about 5 to 10 minutes.

  5. Drain the pasta and add it to the sauce along with the shrimp and dill, then season with lemon juice, salt, and pepper.

Notes

  1. Serves 4 people.

  2. Preparation time is 30 minutes.
