Creamy Shrimp Pasta with Saffron, Tomato, Lemon, and Dill
Ingredients
- 400 g any pasta, preferably tagliatelle
- 3 tbsp extra virgin olive oil
- 1/2 leek, sliced
- 4 garlic cloves, finely chopped
- 1 small carrot, diced (1x1 cm)
- 1 tsp chili flakes
- 0.5 g saffron
- 250 g cherry tomatoes, halved
- 2 tbsp tomato puree
- 5 dl cooking cream
- 1 fish bouillon cube
- 200 g peeled shrimp
- 1 bunch dill, finely chopped
- Lemon juice
- Salt
- Black and white pepper
Preparation
Cook the pasta according to package instructions.
Heat a pan with the olive oil and sauté leek, garlic, and carrot for at least 10 minutes.
Add cherry tomatoes, chili flakes, and saffron, then fry for 1 minute before adding tomato puree and frying for another minute.
Pour in the cooking cream and fish bouillon cube, then let it simmer and combine for about 5 to 10 minutes.
Drain the pasta and add it to the sauce along with the shrimp and dill, then season with lemon juice, salt, and pepper.
Notes
Serves 4 people.
Preparation time is 30 minutes.
