Easy Vegan One Pot Pasta Dish

Ingredients

  • Red onion
  • Garlic
  • 400ml water
  • 1 vegetable stock
  • 300-400g pasta
  • Broccoli
  • Tomatoes
  • Bell pepper
  • Chickpeas
  • 400-500ml oat cream
  • 2 tbsp tomato paste
  • 150ml crushed tomatoes
  • Chilli flakes or powder
  • Tofu, tempeh, or vegan meatballs (optional)
  • Nutritional yeast (optional)

Preparation

  1. Fry red onion and garlic in a pot until brown. Optionally, fry tofu, tempeh, or vegan meatballs and remove once cooked.

  2. Add approximately 400ml water and 1 vegetable stock to the pot along with 300-400g dry pasta. Use just enough water to cover the pasta.

  3. Bring the mixture to a boil. Add broccoli and other vegetables such as tomatoes, bell pepper, and chickpeas.

  4. Pour in 400-500ml oat cream, 2 tablespoons tomato paste, and 150ml crushed tomatoes. Bring to a boil and add some chilli flakes or powder.

  5. Allow the pasta to boil in the sauce until it becomes creamy.

  6. Once done, add tofu, tempeh, vegan meatballs, or beans. Serve and enjoy, for example, by sprinkling nutritional yeast over it.

  7. This method saves dishes and prepares a meal in under 30 minutes.
