One-Pan Vegan Pasta with Oat Cream Sauce
Ingredients
- pasta
- 1 red onion
- 3 garlic cloves
- 1/2 package vegan chicken
- salt
- pepper
- parsley
- 500 ml oat cream
- 1.5 tablespoons vegetable fond
- fresh tomatoes
- oil
Preparation
Parboil the pasta according to package instructions.
In a frying pan with a generous amount of oil, fry 1 diced red onion, 3 crushed garlic cloves, and 1/2 package vegan chicken, seasoned with salt, pepper, and parsley.
Pour in 500 ml oat cream and 1.5 tablespoons vegetable fond.
Add the parboiled pasta to the frying pan and simmer until the pasta absorbs some sauce and becomes creamy.
Add more parsley and fresh tomatoes.
Tip: You can skip the frying process and add all sauce ingredients directly to the pot with boiled pasta for a simpler one-pot method.
Variations: Consider adding frozen spinach or kale to the pasta, or swap vegan chicken for chickpeas, tofu, or tempeh.
You can use any cooking cream you have at home instead of oat cream.
