15-Minute Rose Pasta with Veggies

Ingredients

  • leek
  • seitan (substitute tofu)
  • pasta
  • spinach
  • can of diced tomatoes
  • 1/2 can coconut cream
  • smoked paprika
  • garlic
  • salt
  • basil

Preparation

  1. Cook pasta according to package instructions.

  2. In a large frypan, cook seitan with a touch of soy sauce. Add leeks and a bit of water. Cook for a few minutes.

  3. Add all other ingredients except for spinach. Stir through well and add whichever herbs you like.

  4. Add cooked pasta and spinach to the sauce. Combine well until spinach is wilted.

  5. The dish is ready to serve.
