Green Goodness Pesto Pasta

Ingredients

  • 160-200g pasta
  • 1 cup broccoli florets
  • 2/3 cup packed fresh basil
  • 1 clove of garlic
  • 1/3 cup fresh frozen garden peas
  • 1 tbs nutritional yeast
  • juice of half a lemon
  • 2 tbs of water to blend

Preparation

  1. Boil the pasta and steam the broccoli over it until slightly soft, then rinse in cold water.

  2. Place the basil, garlic, peas, nutritional yeast, lemon juice, and water into a blender and blend, adding water one tablespoon at a time as needed.

  3. Drain and rinse the cooked pasta, add the pesto, mix well, return to heat, and warm through for a few minutes.

  4. Serve and enjoy.
