Hearty Spaghetti Bolognese with Spices and Vegetables

Ingredients

  • 2 tbsp oil
  • 3 small onions diced
  • 5 - 6 garlic cloves grated or crushed
  • 1kg mince meat
  • 1.5 tsp coriander powder
  • 1.5 tsp cumin powder
  • 1 vegetable stock cube
  • 1.5 cans of chopped tomatoes (or use 1 can plus some fresh tomatoes)
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato puree (last night I replaced 1 tbsp with harissa paste)
  • 1 bell pepper diced
  • small bowlful of frozen vegetable (optional)
  • salt to taste (I used about 1.5 tsp)

Preparation

  1. Saute diced onion and garlic in oil for a few minutes before browning off the mince. Allow mince to fully brown before adding in spices.

  2. Add in the dry spices along with the stock cube, canned tomatoes, tomato puree, sauces and salt. Throw in the diced pepper and frozen vegetables too (you can always replace this with mushrooms if you prefer).

  3. Simmer over a medium flame for 20 mins until the sauce has reduced and is thick. Serve with pasta or crusty bread. Enjoy.

Variations

  1. Serve with spaghetti pasta for an easy spag bol.

  2. Use the filling once it's drier in frozen parathas with cheese to make pastries.

  3. Stir some into stir fried rice.

  4. Use it spread on a flatbread with some tomato sauce and top with cheese to make pizzas.
