Easy Healthy Black Bean Brownie Batter

Ingredients

  • 1 can black beans, rinsed and drained
  • 1/2 cup rolled or quick oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 2 tbsp cocoa powder
  • 1/2 tsp salt
  • 1/4 cup unsweetened soy milk
  • 1/3 cup chocolate chips

Preparation

  1. Place oats and black beans in a food processor and process on high for 30 seconds.

  2. Add remaining ingredients except chocolate chips and process until thick and smooth.

  3. Fold in chocolate chips with a spatula. The batter may be slightly warm, causing chocolate to melt a bit.

Tips

  1. Allow the batter to cool fully and add more chocolate chips if desired.

  2. Use as a fun dip, spread, or eat by the spoonful.

  3. It's great on toast with sliced banana and mashed raspberries.

  4. Substitute almond butter with peanut butter for a Reese’s-like taste.

  5. For cheaper almond butter, check store brands at Aldi’s, Trader Joe’s, or Whole Foods.
