Easy Healthy Black Bean Brownie Batter
Ingredients
- 1 can black beans, rinsed and drained
- 1/2 cup rolled or quick oats
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup maple syrup
- 1 tsp vanilla
- 2 tbsp cocoa powder
- 1/2 tsp salt
- 1/4 cup unsweetened soy milk
- 1/3 cup chocolate chips
Preparation
Place oats and black beans in a food processor and process on high for 30 seconds.
Add remaining ingredients except chocolate chips and process until thick and smooth.
Fold in chocolate chips with a spatula. The batter may be slightly warm, causing chocolate to melt a bit.
Tips
Allow the batter to cool fully and add more chocolate chips if desired.
Use as a fun dip, spread, or eat by the spoonful.
It's great on toast with sliced banana and mashed raspberries.
Substitute almond butter with peanut butter for a Reese’s-like taste.
For cheaper almond butter, check store brands at Aldi’s, Trader Joe’s, or Whole Foods.
