Healthy Coconut Banana Bread
Ingredients
- 4 firm bananas
- 200g organic sifted spelt flour
- 50g desiccated coconut
- 50g walnuts
- 50ml almond milk
- 10g baking powder
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 1 tsp ginger powder
Preparation
Preheat the oven to 180 degrees Celsius.
Put the chia seeds with 5 tablespoons of water together in a cup and stir a little.
Mash 3 bananas in a bowl with warm water to aid.
Add the other ingredients and combine well and add to a cake or bread tin.
Slice the fourth banana and place it over the bread mixture in the tin.
Bake for 45 minutes.
Enjoy with your favorite toppings.
