Healthy Coconut Banana Bread

Ingredients

  • 4 firm bananas
  • 200g organic sifted spelt flour
  • 50g desiccated coconut
  • 50g walnuts
  • 50ml almond milk
  • 10g baking powder
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp ginger powder

Preparation

  1. Preheat the oven to 180 degrees Celsius.

  2. Put the chia seeds with 5 tablespoons of water together in a cup and stir a little.

  3. Mash 3 bananas in a bowl with warm water to aid.

  4. Add the other ingredients and combine well and add to a cake or bread tin.

  5. Slice the fourth banana and place it over the bread mixture in the tin.

  6. Bake for 45 minutes.

  7. Enjoy with your favorite toppings.
