Vegan Gluten-Free Pumpkin Peanut Butter Cups

Ingredients

  • 2 tbsp coconut oil
  • 1 cup dark chocolate
  • crushed almonds
  • 1/4 cup Trader Joe's no-salt chunky peanut butter
  • 1/4 cup organic pumpkin purée
  • chia seeds
  • cacao nibs

Preparation

  1. On stove-top combine your coconut oil, chocolate, and crushed almonds until fully melted

  2. Add liners to muffin pan and pour 1 tablespoon of chocolate into each one and freeze until hard, about 20 minutes

  3. While waiting for chocolate base to harden mix together your peanut butter and pumpkin purée

  4. Add a scoop of this to each cup

  5. Pour the rest of your chocolate mixture on top

  6. Sprinkle with cacao nibs and chia seeds and place back into the freezer
