Vegan Pumpkin Pie Bites
Ingredients
- 2 cups organic canned pumpkin purée
- 1 cup unsweetened almond milk
- 1/3 cup brown sugar
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/4 tsp pumpkin pie spice
- dash of sea salt
- store bought crust
- topped with almond milk whipped cream (not pictured☹️)
Preparation
Preheat oven 350F
Throw all ingredients into mixer on medium speed until fully combined - set aside
Roll out your round store bought crust and begin to carve out your mini round crusts - I used my wine glass for this too?!! Place your crusts into the muffin tins and scoop 2 tbsp of your filling into each cup
Bake for 30-35 minutes or until golden brown
