Vegan Pumpkin Pie Bites

Ingredients

  • 2 cups organic canned pumpkin purée
  • 1 cup unsweetened almond milk
  • 1/3 cup brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp pumpkin pie spice
  • dash of sea salt
  • store bought crust
  • topped with almond milk whipped cream (not pictured☹️)

Preparation

  1. Preheat oven 350F

  2. Throw all ingredients into mixer on medium speed until fully combined - set aside

  3. Roll out your round store bought crust and begin to carve out your mini round crusts - I used my wine glass for this too?!! Place your crusts into the muffin tins and scoop 2 tbsp of your filling into each cup

  4. Bake for 30-35 minutes or until golden brown
