Easy Vegan Rice Pudding with Cinnamon Topping
Ingredients
- 1 Liter oat milk or any other vegan milk
- 250g short grain white rice
- 40-60g coconut sugar (adjust to your sweetness level)
- 1 teaspoon vanilla extract
- 2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt, or to taste
Preparation
Bring the oat milk and rice to a boil.
Add salt, vanilla extract, coconut sugar, and nutmeg to the pot.
Stir the ingredients together and let everything simmer.
Lower the heat and cook at a low simmer, stirring often to prevent the rice from sticking to the bottom of the pan.
Cook for about 20 minutes or until it reaches your desired thickness.
Top with cinnamon or other toppings like apple sauce for extra flavor.
