Delicious Vegan Rice Pudding with Toppings
Ingredients
- 1 Liter oat milk or any other vegan milk
- 250g short grain white rice
- 40-60g coconut sugar (adjust to your sweetness level)
- 1 teaspoon vanilla extract
- 2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt, or to taste
Preparation
Bring the oat milk and rice to a boil.
Add salt, vanilla, coconut sugar, and nutmeg to the pot.
Stir the ingredients together and let everything simmer.
Lower the heat and cook at a low simmer for about 20 minutes, stirring often to prevent sticking.
Continue cooking until the mixture reaches your desired thickness.
Finally, top with ground cinnamon and optional toppings like apple sauce for extra flavor.
