Easy Vegan Rice Pudding Dessert
Ingredients
- 1 Liter oat milk or any other vegan milk
- 250g short grain white rice
- 40-60g coconut sugar (adjust to your sweetness level)
- 1 teaspoon vanilla extract
- 2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt, or to taste
Preparation
Bring the oat milk along with the rice to boil.
Add in the salt, vanilla, coconut sugar and nutmeg into the pot.
Stir the ingredients together and let everything simmer.
Lower the heat and allow the mixture to cook at a low simmer, stirring often and scratching the bottom to prevent the rice from sticking to the bottom of the pan.
Allow the mixture to cook for about 20 minutes, or until it reaches your desired thickness.
Finally, top off your rice pudding with some cinnamon on top.
Feel free to use any toppings you like, such as apple sauce, to make it even more delicious.
