Simple Vegan Rice Pudding Dessert

Ingredients

  • 1 Liter oat milk or any other vegan milk
  • 250g short grain white rice
  • 40-60g coconut sugar (adjust to your sweetness level)
  • 1 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt, or to taste

Preparation

  1. Bring the oat milk along with the rice to a boil.

  2. Add salt, vanilla extract, coconut sugar, and ground nutmeg to the pot.

  3. Stir the ingredients together and let everything simmer.

  4. Lower the heat and allow the mixture to cook at a low simmer, stirring often and scraping the bottom to prevent the rice from sticking, for about 20 minutes or until it reaches your desired thickness.

  5. Finally, top with ground cinnamon and serve.

Tips

  1. Adjust the coconut sugar to your preferred sweetness level.

  2. Feel free to use additional toppings like apple sauce for extra flavor.
