Easy Vegan Rice Pudding Snack

Ingredients

  • 1 Liter oat milk or any other vegan milk
  • 250g short grain white rice
  • 40-60g coconut sugar (adjust to your sweetness level)
  • 1 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt, or to taste

Preparation

  1. Bring the oat milk and rice to a boil.

  2. Add the salt, vanilla extract, coconut sugar, and nutmeg to the pot.

  3. Stir the ingredients together and let the mixture simmer.

  4. Lower the heat and cook at a low simmer, stirring often and scraping the bottom to prevent sticking.

  5. Allow the mixture to cook for about 20 minutes or until it reaches your desired thickness.

  6. Top with ground cinnamon and serve.

  1. Adjust the coconut sugar amount based on your preferred sweetness.
