Vegan Rice Pudding with Cinnamon and Nutmeg

Ingredients

  • 1 Liter oat milk or any other vegan milk
  • 250g short grain white rice
  • 40-60g coconut sugar (adjust to your sweetness level)
  • 1 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt, or to taste

Preparation

  1. Bring the oat milk along with the rice to boil.

  2. Add in the salt, vanilla, coconut sugar and nutmeg into the pot.

  3. Stir the ingredients together and let everything simmer.

  4. Lower the heat and allow the mixture to cook at a low simmer, stirring often and scratching the bottom to prevent the rice from sticking.

  5. Cook for about 20 minutes or until it reaches desired thickness.

  6. Top off with cinnamon on top.

  7. Optionally, use any toppings you like, such as apple sauce, to enhance flavor.
