Hainanese Chicken Rice
Ingredients
Chicken
- 700g whole chicken
- 4 cloves garlic
- 2 inches ginger
- 1 sachet oyster sauce
- Salt
Rice
- 400g rice
- 2 cloves garlic
- Soy sauce
- Chicken stock
Sambal
- 2 red bird's eye chilies and 8 red chilies or to taste
- 1 clove garlic
- Ginger
- Chicken stock
- Salt
Garnishes
- Cucumber
- Spring onions
Preparation
Chicken
Boil the chicken with sufficient water, add garlic, ginger, and salt until cooked.
Remove the chicken, coat with oyster sauce, then fry briefly in hot oil.
Remove and set aside.
Rice
Sauté garlic until fragrant, add rice and stir well.
Transfer to a rice cooker, add chicken stock and soy sauce, and cook as usual.
Sambal
Grind the chilies, ginger, and garlic together.
Add chicken stock and salt to taste.
Assembly
Arrange the rice on a plate, add the chicken and cucumber as complements, and serve with broth garnished with spring onion slices.
