Pressure Cooker Hainanese Chicken Rice
Ingredients
- 1 whole free-range chicken, halved but not separated
- Salt, pepper, garlic powder to taste for coating
- 3 tablespoons cooking oil
- 2 tablespoons sesame oil
- 2 pieces ginger, sliced
- 7 cloves garlic, coarsely chopped
- 600 grams rice
- 2 tablespoons soy sauce
- 1 teaspoon salt
- 1/2 teaspoon mushroom stock or seasoning
Preparation
Turn on the pressure cooker and press the 'Saute' button. Add cooking oil and sesame oil, then sauté ginger until fragrant, and add garlic, sauté until fragrant.
Add rice, then mix in soy sauce, salt, and mushroom stock or seasoning. Pour in water.
Coat the chicken with salt, pepper, and garlic powder to taste, then place it on top of the rice mixture.
Close the pressure cooker, press 'Cancel', and then press the 'Chicken' button.
Wait until cooking is complete and the pressure cooker can be safely opened. Remove the chicken, cut it as desired, and serve warm with the rice.
