Rice with crispy onions
Ingredients
- 75g red rice
- 3-4 stalks of cavolo nero
- 5-6 cherry tomatoes
- 3-4 chestnut mushrooms
- 2 cloves of garlic
- 1 inch piece of ginger
- 1/2 a red chilli
- 30g crispy onions
- 1 tbsp soya sauce
- 1 tsbp sesame oil
- 1 tsp rice wine vinegar
Preparation
Rinse the rice and put in a pan with three times the volume of water and some salt, bring to a boil and then reduce heat and simmer for 20 mins
Meanwhile, finely chop garlic, chilli & ginger
Slice the mushrooms into thick slices, halve the tomatoes
Chop the cavolo nero into chunks
Heat oil in a pan and saute the mushrooms for about 5-7 mins, then add the garlic, chilli & ginger and saute for another minute or two
Add in the cavolo nero & tomatoes
When rice is ready, drain and add the pan of vegetables
Give a good mix & add sesame oil, vinegar & soy
Serve up and top with crispy onions !
