Rice with crispy onions

Ingredients

  • 75g red rice
  • 3-4 stalks of cavolo nero
  • 5-6 cherry tomatoes
  • 3-4 chestnut mushrooms
  • 2 cloves of garlic
  • 1 inch piece of ginger
  • 1/2 a red chilli
  • 30g crispy onions
  • 1 tbsp soya sauce
  • 1 tsbp sesame oil
  • 1 tsp rice wine vinegar

Preparation

  1. Rinse the rice and put in a pan with three times the volume of water and some salt, bring to a boil and then reduce heat and simmer for 20 mins

  2. Meanwhile, finely chop garlic, chilli & ginger

  3. Slice the mushrooms into thick slices, halve the tomatoes

  4. Chop the cavolo nero into chunks

  5. Heat oil in a pan and saute the mushrooms for about 5-7 mins, then add the garlic, chilli & ginger and saute for another minute or two

  6. Add in the cavolo nero & tomatoes

  7. When rice is ready, drain and add the pan of vegetables

  8. Give a good mix & add sesame oil, vinegar & soy

  9. Serve up and top with crispy onions !
